Yesterday had rain on and off, and ALL my children were home for lunch!
Sometimes a rarity these days because of so many different schedules.
So I gathered them up and said, “Let’s make lunch together!”
When I was last at the store I was reminded about how much my dear husband likes, “Tomato Basil Squares” an easy dish that I used to make when I was a Pampered Chef Consultant.
So while there I gathered a few of the ingredients that I didn’t already have so we could make some for him this week. I gave the kids directions, but basically they did the work and learned how to make the recipe on their own.
I was there to give advice on safety and measurements and whatnot… but basically I just got to watch magic happen in the kitchen.
They worked very well together and were extremely proud of the final product… I think even more so because they knew their daddy would be tickled to have some when he came home and some for his lunchbox this week.
Here’s the recipe if you want to try these as well!
Tomato Basil Squares
1 package of refrigerated pizza crust (or you can make your own)
2 cups shredded mozzarella cheese
1/4 cup parmesan cheese
2/3 cup mayonnaise
2 Tbsp fresh basil or 1 Tbsp dried
1 garlic clove minced
4 plum tomatoes
Preheat oven to 425*
Unroll pizza crust into baking pan or casserole dish. Give the edges a slight lip, meaning a boundary to keep in the goodness.
Bake about 15 minutes
(We topped the raw dough with a bit of cheese before baking)
Mix all ingredients together except for tomatoes and 1/2 cup mozzarella.
Slice tomatoes.
Scoop mixture over slightly baked crust and spread.
Add tomatoes over the cheese mixture.
Sprinkle top with remaining mozzarella.
Bake again for 10-15 minutes til cheese is melty and crust is golden.
**By the way** This recipe is for one batch. We doubled considering the size of our family and our appetites and my husbands love of the dish. 😉 haha
