Luscious Lemon Curd Trifle

For Resurrection weekend, we had a celebration at my Mom’s. She saw this beautiful trifle on Pinterest and begged for me to make that for our dessert.
I happily obliged… it contained lemon curd… so wouldn’t you? Yum!

I’ve said it before… lemon curd just makes you feel fancy. I don’t know why, I mean I think of French cooks whisking the eggs and sugar and saying Oo La La. Snort… I’m a goof.
This is how I made mine.
Lemon Curd:
3 whole eggs
1/3 cup lemon juice
1 tablespoon lemon zest
3/4 cup sugar (I used organic cane juice crystals)
4 tablespoons of butter

In a double boiler over simmering water, mix eggs, juice and sugar. Cook, stirring constantly til thick. Once it thickens, run mixture through a strainer. You don’t want lumps.
Mix in butter and zest.
Pour into a lovely jar and do your best to resist eating the whole stinkin jar.

I need a shirt that says I *heart* lemon curd. It’s divine!

I used some heavy cream with just a couple of tablespoons of sugar and mixed at high speed to make a beautiful whipped cream.

Both of these, mixed with angel food cake and fresh berries. This dessert was delightful!

For summer gatherings and potlucks… I think this dessert would be a great take a long. It looks impressive and tastes even better!

    Oh, you have no idea how much I love lemon curd! My Libby does, too. I might have to make this for her birthday in July. Wait, no, that's too far away! ๐Ÿ˜›
