For Christmas Breakfast:

Good Morning my friends! I hope you are having a beautiful day. It is only 10!!! days away from CHRISTmas.  Incredible. I have been working and planning for the blessed day for weeks. I can hardly believe it is scarcely over a week away.
I have a wonderful recipe for you this morning. Perfect for your Christmas breakfast.

What’s neat about this recipe is that you make it and store it in a gallon size container. It grows and then it ferments. Even we did not use the whole amount today. What’s left stays in the jar and goes in the fridge! It’s great!
Here’s the recipe.

Grandma’s Pancakes
6 eggs
4 cups buttermilk
1/4 cup olive oil
1 cup half-n-half or cream (I used cream)
1 T yeast
4 cups flour (you can use all white, all wheat or a mixture of the two)
2 Tbsp baking soda
2 Tbsp baking powder
2 Tbsp sugar
1 Tbsp salt

In your gallon jar mix up all your wet ingredients. Just dump em in one by one and mix.
Take a large bowl and mix up all your dry and then cup by cup scoop the dry and mix into the wet.

Heat a cast-iron skillet and melt your fat (butter, bacon grease, olive oil, coconut oil…whatever you like) and drop your cakes onto the hot fat and brown each side.
If you are making enough for a crowd or a big family 🙂 have a cookie sheet in a low temp oven (150*-200*) and place the cakes in there while you fry up more for the rest of your crew.

They are so wonderfully light and flavorful. They are soooo good the first day, but the next day. Even better!!!!

While you are working on your cakes, begin your syrup.
Now, we DO NOT buy premade syrup. Nope.
High-fructose laden poison. Don’t buy it. Throw it away if you have any. It’s awful stuff.
We oftentimes do not have the money for REAL maple syrup, so here is our alternative.

It works wonderfully for us. It isn’t as beautiful as real maple syrup, but you can make it taste pretty awesome with this.

 This is Natural Maple flavoring. It was $1.89 at my health food store. Perfect to flavor our syrup.
Here’s the recipe:
2 cups Sucanat, Sugar or Brown Sugar (I used Sucanat)
1 cup water

Heat until the sugar dissolves in the water.
Once dissolved take it off the heat and stir in 2 tsp of flavoring.
Then pour into a heat safe bottle.

I use an old maple syrup bottle. It’s glass and can handle the warm syrup. Mmmm

Once you have enough pancakes ready, your syrup ready, slap on a pat of butter.. grab a cold glass of raw milk and FEAST!

 Another great thing about it….
You already have your breakfast almost ready for tomorrow!
Into the fridge goes your excess batter.
Stir it up the next morning and repeat.
