Each year I look forward to making up zucchini bread. My family LOVES it for breakfast, snack or anytime. It is wonderful and such a treat. I have altered my family recipe to include some healthier alternatives. I hope to continue to improve our recipe (health wise! Taste wise it is TOTALLY amazing!) Until then, this is a somewhat revised recipe.

Zucchini Bread
3 1/2 cups soft white wheat flour
1 cup Sucanat
1 cup sugar
4 eggs
1 cup olive oil
2 cups chopped zucchini
1/2 cup chopped dates
1/2 cup raisins
1 cup nuts
1 1/2 tsp. baking soda
1 tsp. salt
3/4 tsp. baking powder
1 tsp. vanilla
1 tsp. cinnamon
Beat eggs till thick, add sugars gradually, add oil, add vanilla
Sift together dry ingredients, flour, soda, b. powder, salt, cinnamon.
Beat this into the wet ingredients and beat slowly for 3 minutes.
Fold in zucchini and beat a little, fold in nuts, raisins, dates. Bake at 350 for approx. 50 minutes or until toothpick comes out clean.
Makes 2 loaves!
