Summer Side Dish

Chas · June 14, 2010 · Leave a Comment

Being a Southern gal, you learn to make fried squash when your a youngin and then it is a staple in your summertime kitchen. It’s goooood!
I’m not knocking fried squash, or fried okra or any thing of the sort, by giving you this alternative… I  am simply saying that a while back I stepped out of the box and began making my family and *my* favorite summertime side dish.

I start with a 10″ saute’ pan and drizzle a little olive oil in the bottom.
Get it warm while you are slicing your vegetables.
This time I used zucchini, squash, onions and carrots. You can use any of the combination or add to the combination… for example, I used mushrooms before and it was fantastic. Use what you have, and we often have lots of these vegetables in the summer. (and there is NO certain amount, use as many or as few of each as you see fit…) ๐Ÿ™‚
After you have them sliced thin, toss them in your pan and let them begin to cook down. Stir them around occasionally, you don’t want any to burn.
Once you can see that the medley is beginning to cook down and soften, splash on a little bit of your secret ingredient… which I LOVE and I will always keep this in my kitchen.
Bragg’s Liquid Aminos! Yum-o! I love this stuff!

The following is taken from the Bragg website.

Health Benefits:

  • A source of delicious, nutritious, life-renewing protein.
  • Taste you’ll love – Nutrition you need.
  • Great on salads, veggies, dressings, soups, rice, beans, Wok foods, tofu, gravies, jerky, poultry, fish, popcorn, meats, casseroles, potatoes, etc
  • Contains important healthy amino acids

Bragg Liquid Aminos contains:

  • no chemicals
  • no artificial coloring
  • no alcohol
  • no preservatives
  • no Gluten
  • Certified NON-GMO

Ok, so you splash a little of the wonder seasoning on your veggies and let them cook down even further. Now you want them to cook down til nice and tender, not down to puree form. ๐Ÿ™‚
Like this…

Oh, yum-o. It truly is our favorite summer side dish. Mmmm, I hope you try it and see for yourself.
Have a wonderful week!

I have squash and zuchinni literally coming out of my ears, Praise the Lord. We love all of these fresh veggies that we just walk out the back door to obtain. I usually just chip up some onion in a saute pan with some butter and add the squash and zuchinni and cook them down. However, I will be trying your recipe one night this week. Thanks for sharing.

That looks good! That's what we call "fried squash" in my house, but I've never tried it with the Bragg's–I'll definitely do that soon (we too have lots of squash here).

I love squash. We usually mix it with flour and cornmeal and fry it. Quite honestly, I am getting a little tired of this as well as my family. I am really looking forward to trying this. We have used Braggs in the past and I actually have some in my cabinet that I have not touched in months. You have inspired me with Squash and Braggs!

Yum! Right now I am wishing that my squash plants would not have succumbed to the dreaded squash borer worm! We use Bragg's Apple cider vinegar but I will have to look for the liquid aminos on my next trip to the health food store.

Interesting! I do this dish a lot in the summer with our garden fresh veggies with just oil or butter and salt and pepper. It will be fun to try something new to jazz it up a little. Thx for the idea.
