Summer Side Dish

Being a Southern gal, you learn to make fried squash when your a youngin and then it is a staple in your summertime kitchen. It’s goooood!
I’m not knocking fried squash, or fried okra or any thing of the sort, by giving you this alternative… I  am simply saying that a while back I stepped out of the box and began making my family and *my* favorite summertime side dish.

I start with a 10″ saute’ pan and drizzle a little olive oil in the bottom.
Get it warm while you are slicing your vegetables.
This time I used zucchini, squash, onions and carrots. You can use any of the combination or add to the combination… for example, I used mushrooms before and it was fantastic. Use what you have, and we often have lots of these vegetables in the summer. (and there is NO certain amount, use as many or as few of each as you see fit…) 🙂
After you have them sliced thin, toss them in your pan and let them begin to cook down. Stir them around occasionally, you don’t want any to burn.
Once you can see that the medley is beginning to cook down and soften, splash on a little bit of your secret ingredient… which I LOVE and I will always keep this in my kitchen.

Ok, so you splash a little of the wonder seasoning on your veggies and let them cook down even further. Now you want them to cook down til nice and tender, not down to puree form. 🙂
