When Life gives you Apples… Make Apple Butter

Not only have I been able to put up all the tomatoes that I told you about, I believe I mentioned the apples yet another friend gave us.
Today, I am pickling garlic, as well as canning up the last batch of apple butter. This batch is even bigger than the first, so I should have a good many pints filled up today.

The smell in the kitchen is not as lovely as yesterday.
Let me tell you, the smell of garlic and vinegar competing with apples, cloves and cinnamon is not a beautiful combination.
They both smell great in their own world, but mixing is not a pretty picture. haha

Alright… quit jabbering Chas… 🙂

I told you I had a SUPER easy, SUPER delicious recipe for apple butter.
Honestly, you will NEVER go back once you have tried this recipe.
It’s that good.

Crockpot Apple Butter
6 cups Apples
3 cups Sugar

These spices are a mix that I like… now if you don’t care for one or the other eliminate it! Or, add more of what you like. Just play, taste and find your favorite combination. 🙂
4 Tbsp. Cinnamon
1 tsp. Nutmeg (optional, if you use it, use freshly ground)
2 tsp. Cloves (I added that)
2-3 Tbsp. Vanilla ( I LOVE what this does for the flavor!)
Put all your apples in the bottom of your crockpot (I used my roaster because I made such a big batch), then sprinkle on the sugar and spices. Do not stir.
Cook on low all night and in the morning you are ready to puree or mash and jar up your butter.
Put your jars in a hot water bath for at least 15-20 minutes.  

It REALLY is that simple. And it is sooooo good. 
Another great thing is, if you get it on the night before and then it is ready for you in the morning… How wonderful would this warm apple butter be with a nice crunchy piece of toast and butter. YUM!

I thank you for your visit and I really thank you most for your prayers. Shannon has been able to do a couple of odd jobs this week. Thankfully.
We are still very unsure of what the future holds for us… but, we KNOW who holds the future.
We know we are HIS children and that nothing happens to us that He doesn’t allow. 
Please continue to pray if you don’t mind. We are seeking God’s will in the matter and we don’t want to get anxious and jump ahead of His perfect time.
