Homemade Mayonnaise

One reason I have been so eager to have my own chickens is so that I could happily make my own (much healthier) version of mayonnaise. I know most people have this I love it, or I hate it mentality. Well, I love it. Especially if it is good for you and I don’t mean Hellman’s Light either. blech.

Making your own just takes a few seconds and it is worth it…

All you need is:
A blender or food processor
A fresh egg
1 cup of Light oil, in my case I used Safflower oil. I used a light olive oil before, but I felt it was still too strong.
1 Tbsp. Vinegar
1 Tbsp. Fresh Lemon juice
 1 tsp. salt

Begin with your blender and add your egg, 1/4 cup oil, salt, vinegar and lemon juice. Blend this for about 5 seconds.
Open your top and slowly pour in the remaining 3/4 cup oil. As soon as your last drop is in. You are done.
Easy peasy and oh so good. ๐Ÿ™‚

    I've tried making mayo before, but used olive oil. Perhaps that was the problem. I need a LIGHT oil! I may just try that again…

    I haven't had any luck making mayo- it never emulsified. I'll try again with your recipe- I just (heart) real mayo! No Miracle Whip for me ๐Ÿ˜‰
