Week 1 of $40 Week Challenge

Here is a copy of my weekly menu for this week 1/31-2/6
It results from my $40 a week challenge.

Sunday- Breakfast- Bagels w/ Cream Cheese, Coffee, Milk
              Lunch- Leftovers, Lemonade
              Supper- Chinese Noodles, Water

Monday- Breakfast- Organic Pop Tarts, Milk
               Lunch- (Kids went to Grandmaw’s, I had salad)
               Supper- Chicken Salad Sandwiches, Veggies with Dip, Fruit, Water

Tuesday- Breakfast- Eggs, Juice
               Lunch- Tomato Soup, Water
               Supper- Chicken Casserole, Mashed Potatoes, Green Peas, Fruit Tea

Wednesday- Breakfast- Soaked Oatmeal (NT), Milk
                    Lunch- Grilled Cheese, Veggies with Dip, Water
                    Supper- Homemade Vegetable Pizza, Fruit Tea

Thursday-  Breakfast- Sourdough Pancakes, Homemade Syrup, Milk
                  Lunch- Veggie Burritos, Water
                  Supper- Potato Soup, Cornbread, Tea

Friday- Breakfast- Biscuits and Gravy, Juice
             Lunch- Leftover Potato Soup, Salad, Water
             Supper- Pinto Beans, Fried Potatoes, Turnip Greens, Tea

Saturday- Breakfast- Farina, Milk
                Lunch- Leftovers of the week, Water
               Supper- Lasagna, Salad, Garlic Bread, Fruit Tea

Snacks for the week- Apples, Grapes, Bananas, Oranges, Amish Cookies

Now, realize… I am trying to s.t.r.e.t.c.h. our budget… this might not be the BEST menu plan for some, but this is what I can come up with while keeping us at $40 and using what is in our pantry and freezer.

    I think it sounds great! That's what this kind of challenge is about- doing what works for YOU and your family.

    Tuesday you're having eggs and juice for breakfast. Will your kids eat just eggs? My spoiled punks ๐Ÿ˜‰ insist on some kind of bread-something with eggs. Is there a trick to this that I don't know? I think they're too much like their mother.

    Oh, and for the record, my hot dogs in the thermos worked out GREAT! I boiled the dogs for about 5 minutes (not the way I usually cook them) and meanwhile filled the thermos with hot tap water. When the dogs were done I poured out the tap water, put in the dogs and refilled with the super hot water from my cooler spigot. I think bringing some water to a near boil would work too.

    No one complained, even though they were not our usual brand (when will Hebrew National EVER go on sale again??) and not cooked in the normal way. They were all too excited to have hot dogs at all ๐Ÿ™‚ I packed it all up a little before 4. When we got home at 9 the water burned my finger when I was pouring it out of the thermos. Next time I will bring a pair of tongs because it was hard to get a hot dog out of a thermos with a plastic fork ๐Ÿ™‚

    Oh, and after hearing you boiling eggs for your chicken salad I had to go home and make potato salad. It was awesome! Thanks ๐Ÿ™‚ I love you!

    sounds yummy!

    I also have on my menu the beans, cornbread, fried potatoes and turnip greens. we LOVE this. Do you parboil your greens first for like 3-5 minutes, dump out the water and then fill with fresh water and cook like normal with a hamhock or bacon? that is how i do it, i have found it takes some of that bitterness i sometimes get when making the turnip greens. If not, i would love ot know how you cook your greens. ๐Ÿ™‚ i am always up to finding out new ways of doing things.

    I will be following this challenge closely as I was just at Costco and almost fainted when they gave me the total bill!

    I have always been frugal, but I need to "step-up my game" as they say. I know you will be an inspiration to me in my endeavor.

    Oh my goodness, $40 a week. Well, I would really make my hubby happy if I could accomplish this goal here at my home. I look forward to seeing how you meet this goal. It is a GOOD one. Best of wishes to you and prayers too. God Bless, Cynthia

    This is very inspiring! I think I might give it a whirl. But maybe with $60 a week. I don't have much pantry space so I don't have much stock here at the house. We have been blessed with a freezer full of meat though! We also have our own egg layers. Theres nothing like fresh eggs! I love to make bread but I have gotten away from it lately. I think I need to start making it again.(my husband would love it) Thanks for the inspiration
