Choosing to serve?

Happy Monday, Friends! Here we are about to close out another month of 2010! It really is amazing how time flies by.... But we were warned, right?
...Time flies when you're havin' fun...
Now that I am older and I watch my children growing before my eyes, I can truly attest to that.  
All my life, I have enjoyed children. I love to play and learn and grow... the things children are known for doing.  I love to make my children smile. I want to do things with them that they enjoy, but I also want them to know that the world doesn't revolve around them... is that mean?
I don't believe so. 
In the beginning, we were put here for a purpose. We were made by God and for God, for His glory!
I want to show our children that we were not put here to 'grab all the gusto' but to...

Micah 6:8
He hath shewed thee, O man, what is good; 
and what doth the LORD require of thee, but to do justly, 
and to love mercy, and to walk humbly with thy God? 

Jesus was a servant. He in all His infinite glory, served others!
Are we better than that???
We are to follow His lead!
Loving, Serving, Sharing... these traits are not familiar to the world of these days. 
The Bible says...
Romans 12:1-3
I beseech you therefore, brethren, by the mercies of God, 
that ye present your bodies a living sacrifice, holy,
acceptable unto God, which is your reasonable service.
And be not conformed to this world: 
but be ye transformed by the renewing of your mind, 
that ye may prove what is that good, and acceptable, and perfect, will of God.
For I say, through the grace given unto me,
to every man that is among you, 
not to think of himself more highly than he ought to think;
but to think soberly, according as God hath dealt to every man the measure of faith.

I will follow His example and lead my children to do the same....

Garden Fresh Pizza

Last night, we had the most incredible pizza. 
Oh yum. 
Is that rude to say something like that about your own creation? 
I hope not, because us Southern Gals should not 'toot our own horn'. 
But really... mmmm. :)
I gathered some items from the garden,
     some of ours,                        
                          some given to us by loved ones.
I sliced them all up and sauteed them lightly in a little olive oil.
I sprinkled a little real salt, some oregano, basil, pepper.
Are you getting hungry?
A simple marinara sauce.
A wonderfully versatile quick whole-wheat bread dough.
Some cheese.
A few pepperoni.
Some heat...
I had enough dough for two pizzas, so of course... the kids asked for
I can't wait until this is cheese that we have made from our cows milk! 
...Be patient, Chas... calm down...
I can get completely giddy thinking about the day! :)
But, until then...
pizza that is almost completely homegrown 
totally homemade
                        is soooo much better than you can imagine!

Summer Kitchen

I love the idea of a summer kitchen. I would LOVE to have an out of doors stove, I think it would be wonderful not to have to heat the house up to bake or cook.
I don't have a traditional summer kitchen, but I have one that works for us. :)

Today I set out my dehydrator and worked up some banana chips. Every time I walk outside I get a strong whiff of bananas. :)
Tomorrow, I plan on setting out my roaster and baking my bread out there.
I also plan on putting a pot of beans in my fire pit in the next few days.

Crazy Fred Meets the Water

Fred, has been renamed Crazy Fred... because of the following story. 
Last week, we caught Fred and took him down to the pond. 
Cameo let him go and he met the water.
Total Love...
He then climbed back up on the land, getting to know the area.
Winn-Dixie decided she wanted a part of the cool water and to take a swim with him.
Fred decided to jump in again... Oh yeah, he likes it we said.
Well, we were wrong...  he came waddling along behind us, 
back to hang with the chickens, again.
Hence the name, Crazy Fred.

Zucchini Bread

Each year I look forward to making up zucchini bread. My family LOVES it for breakfast, snack or anytime. It is wonderful and such a treat. I have altered my family recipe to include some healthier alternatives. I hope to continue to improve our recipe (health wise! Taste wise it is TOTALLY amazing!) Until then, this is a somewhat revised recipe.
Zucchini Bread
3 1/2 cups soft white wheat flour
1 cup Sucanat
1 cup sugar
4 eggs
1 cup olive oil
2 cups chopped zucchini
1/2 cup chopped dates
1/2 cup raisins
1 cup nuts
1 1/2 tsp. baking soda
1 tsp. salt
3/4 tsp. baking powder
1 tsp. vanilla
1 tsp. cinnamon

Beat eggs till thick, add sugars gradually, add oil, add vanilla
Sift together dry ingredients, flour, soda, b. powder, salt, cinnamon.
Beat this into the wet ingredients and beat slowly for 3 minutes.
Fold in zucchini and beat a little, fold in nuts, raisins, dates.  Bake at 350 for approx. 50 minutes or until toothpick comes out clean.
Makes 2 loaves!
SOOOO good!!!

Summer's Pasta Salad

I seem to be on a theme this week... wonderful summery meals or sides. Yum. You just can't beat summer foods. Fresh crisp veggies. Perfection.
I put this dish together to take over to my Sister's. We are going to try to spend one day together each week, and with her having the pool. She gets the vote to have it at her house. :)
Sooo, I figured I would try to bring some yummy food.
I had a big pot of whole wheat rotini pasta cooked from the night before, so I saved some.
Then I cut up one big tomato
One onion
I cut up half a cabbage and cut it finely
Carrots, cut into little slivers
A can of whole kernel corn, if you have fresh...even better!
I sliced up some olives
A handful of craisins
If I had a cucumber, I would have added that too.
And, if I had a bell pepper, that would have been in there also.
What I am saying here again, just add what you like, take out what you don't!
Once I got to my Sister's house, we added a few splashes of a light Italian dressing and some salt.
You could totally go without it, but we didn't. :)
Such a great way to get in some of your veggies and your whole grains. Yum-o!

Cucumbers and Onions

Yesterday we talked about great side dishes... Another one of my favorites for the summer is Cucumbers and Onions. 
It is sooooo easy and soooooo good!!
I hope you enjoy! 
Take and slice 4 cucumbers, you can peel them too, but I didn’t!
Put them in a bowl and toss them with 1 tsp salt to bring out the juice.
Let that mixture sit 15 minutes.
Now drain the juice.
Add 1 onion and several hot peppers
1 Tablespoon full of Vinegar
3 Tablespoons full of Sugar and mix everything well.
Very good… it is a little sweet and a little salty…

Summer Side Dish

Being a Southern gal, you learn to make fried squash when your a youngin and then it is a staple in your summertime kitchen. It's goooood!
I'm not knocking fried squash, or fried okra or any thing of the sort, by giving you this alternative... I  am simply saying that a while back I stepped out of the box and began making my family and *my* favorite summertime side dish.
I start with a 10" saute' pan and drizzle a little olive oil in the bottom.
Get it warm while you are slicing your vegetables.
This time I used zucchini, squash, onions and carrots. You can use any of the combination or add to the combination... for example, I used mushrooms before and it was fantastic. Use what you have, and we often have lots of these vegetables in the summer. (and there is NO certain amount, use as many or as few of each as you see fit...) :)
After you have them sliced thin, toss them in your pan and let them begin to cook down. Stir them around occasionally, you don't want any to burn.
Once you can see that the medley is beginning to cook down and soften, splash on a little bit of your secret ingredient... which I LOVE and I will always keep this in my kitchen.

Homemade Window Cleaner

I just made my own Homemade Window/Mirror Cleaner
and it worked so well, I wanted to share!
Start with a clean spray bottle
*DON’T use one you have had bleach in before!!!*
Bleach and vinegar together make fumes that are poisonous!
2 cups water
1/4 cup white vinegar
1/2 tsp. dish soap
20 drops of lemon essential oil (or any essential oil that you love)
Shake vigorously!
Now you have a great non-toxic concoction to
 clean all your windows, mirrors, etc!!! 
AND it cost you just pennies!!!!!

VBS 2010

We are in the middle of VBS for this year. Always a very hectic time, but a very, very rewarding time as well.
A bunch of work and a bunch of fun.
We had a kick-off on Sunday, with a petting zoo and carnival games.
Hence the picture of the Llama above, her name was Jasmine and I want her to come live at our farm. She was wonderful.
I can't remember what the man called him... but when he wanted it to come to him, he said... "C'mon Pig", so there you go. I liked him too. :)
Eli feeling right at home with the animals.
Abe liked the sheep. He has been asking when we will have sheep at our house for a while now... we will see. :)
Cameo enjoyed petting the sweet bunny, too.
Carlie Jean got her face painted... this was when it looked sweet and pretty, later on in the day she looked like she had been in a paint fight, her whole face was covered with paint. :)
I hope you are gearing up for Vacation Bible School where you live to, get involved. It's great fun! :)

Fred's Introduction

Friday afternoon we were out inviting people to VBS and on the side of the road we see this lonely duck just wandering around wwaaayyyy to close to the road.
When we came back through and there he was still there, in my mind I said,
I'm gonna get that duck
and then Shannon said,
Why don't you catch it?
I stopped the car and jumped out and headed straight toward it...
Shannon hollared at me and said,
Are you REALLY gonna try and catch it?
Of course I am!
And with Cameo's help, we did.
He put up no fight at all.
And now he is at home, here with us and safe from being ran over.

Raspberries and Cream

A long time ago my Grandmother, whom I call Nannie Black, would make Banana Pudding for us on special occasions. Me, who has NEVER been fond of bananas, LOVED this pudding. I knew one day I when I had a home of my own I would want to make it just the way she did, for my family.
So... when I was a young gal still at home I began trying my hand at Nannie's way.
It is a family favorite and we have it from time to time.
What does this have to do with Raspberries and Cream?!?!
Have I completely went into time warp and forgot the reason we are here???
I remember.
The reason I brought all that up, was the pudding/creamy part of the pudding is what I am going to use for our dessert today!
It is sweet and creamy and delicious, and the rich yellow color comes from our fresh eggs of course. If you can swing good, fresh eggs... make this dish with them, you won't be sorry!
Here is exactly how my Nannie told me to make it.
  • Put 3-4 egg yolks in a blender
  • add 1-11/2 cup sugar
  • 2 tsp vanilla
  • fill blender 3/4 way full with milk or cream
  • add 4 heaping tsp of cornstarch 
Now, blend until combined and pour into a saucepan over medium heat and stir constantly until mixture becomes thick.
That's it...
Of course you can get fancy and chill the mixture over ice quickly or you can run it through a sieve to get out any lumps, but mine is just straight up, no frills. :)

.... and completely delicious! :)

*Also my friends... speaking of my Nannie Black. She will be in surgery this morning. Please uplift her in your prayers. God knows who my Nannie Black is.

A while back I started a journal... one that I fashioned from one I saw on Jewels' blog. I have kept journals on and off through my teenage years and now into my adult life. I have been haphazard, journaling for a little while and then there is a month expanse and then back to it. I have been fairly consistent with this one and I hope to continue. It is very lovely and when I pasted the cut outs in there, the pages seem to eagerly await for my words. I hope to keep them up and then be able to stick them in my hope chest and one day my children, grandchildren, great grandchildren will have something to read and remember.
I used a composition book, just because I was eager to begin and I wouldn't be in town to get me a nice sketch book, but either will work just fine! You will also need some pictures that you have found that you especially enjoy, cut outs or whatever you would like. My daughter has started one as well and she has used stickers and stamps and what not. Paste them in various spots on the pages, leaving a little room for your thoughts, dreams, memories, etc. And enjoy your quiet time alone with your journal.
I've started reading Created to be his Help Meet by Debi Pearl (again). I am using my journal for the study questions at the end of each chapter. This book is one that I enjoy...
So here is a picture of my set up for a nice quiet reading and reflection time. My Bible, my book, my journal and my coffee! :)
