Broccoli Cornbread and THE WINNER!

Tonight I am using up some leftovers and making up some Potato Soup with ham. 
I thought this would go nicely...

Broccoli Cornbread

1/2 stick butter
1 box frozen broccoli (I used fresh since I had some)
2 boxes jiffy cornbread mix
3 eggs
1 c. milk
1 c. cottage cheese
1 c. cheese (shredded)
1 sm. onion chopped

Preheat oven to 375 degrees.
Mix butter, broccoli, bread mix, eggs, milk, cheeses, and onions together.
Bake at 375 for 30 minutes in a sprayed 9X13 casserole dish!


It is so tasty and so nice to go along with the soup. Mmm.
